Rasam

Ingredients Measure
  Tamarind water ½ cup
  Tomatoes 2
Fresh coriander - finely chopped 1 tsp.
  Pepper and cumin- powdered 2 tsp
  asafoetida powder ¼ tsp.
  salt 1 tsp.
  Boiled lentils (toor dal) 2 tsp.
  vegetable oil ¼ tsp
  red lentils 1 ½ cups
  mustard and cumin seeds ¼



Preparation

  Place oil, garlic, ginger, chilli, cumin and turmeric in a large non-metallic bowl and cook on full power in microwave for 3 minutes. When finished cooking, stir, and add stock and lentils, stir in well, cover and cook for another 40 minutes. Check half way through and stir. When cooking has finished check for thickness, if not thick enough give it a bit more cooking time. If it is done, mash and garnish with fresh coriander and slices of lemon. Serve with rice of your choice, pita bread, chapati.
